We are trying a new recipe with my sister R. Who lives on the other side of the globe.
Attempt 1:
+Zest of 2 lemons rather than one orange.
+Gluten free flour rather than regular
+Cocoanut oil rather than butter to oil pan(dairy free)
+3 eggs instead of 4
Whites first did not fluff with a handheld immersion blender so I started whisking them by hand. This worked well. I was 90% done but tired and decided to finish whisking the last of the sugar in with the handheld immersion blender. My meringue immediately went flat! In desperation I pulled out my tabletop mixer but there was no saving my flat meringue.
Mental note: it is storming and humid today - the meringue gods are not with me. Personal note: this is my first meringue to ever flop.
Too much mess. . . not enough cake.
Waiting for dear hubby to arrive home from work with a rescue order of eggs.
